Aged tequilaAccording to the Mexican official norm….
“Aged Tequila. Product that at least leaves to 2 months in oak wood containers
or encino, susceptible to be led and fit with dilution water to its commercial
graduation.”
The aged tequila is the white tequila that is obtained after it to have left
resting in barrels or pipones of white oak or encino, during at least two
months, this according to the Mexican official norm, which unlike the white
Tequila takes a color amber very similar to the one from the wood.
With respect to the wood used in the maturation of the tequila, it is possible
to be said that this drink also takes different scents and flavors following
these wood.
Another one of the important points that we must consider for the maturation and
maturing of the tequila, is the conditions of the atmosphere, humidity and
ventilation.
This process of maturation is the one that gives that smooth flavor of the Aged
Tequila.
